I realized that after all a craftsman, a brewer, is like a writer that slowly, bit by bit, draws inspiration for his stories from the everyday events of his life: his products are nothing but part of the tale of his own life, in which he puts his own personal experiences. The ingredients are only part of the story, and simply boasting about their undisputed quality is useless. The brewing process is the pen with which he delineates the shape of the story. My beers are LIQUID STORIES. Each beer has its genesis. I could tell the story of how each single beer was born, the reasons behind that particular recipe, what inspired me to it and how it differs from the others.
Each beer represents not a single creative moment, but a creative process that keeps fuelling itself and never stops. Its name, its label, its packaging, the ingredients I chose are all chapters of its story. I see my work team as a sort of a rock band: we write our songs and we perform it time after time, trying to express our individuality through every single performance. Each performance is unique in its own way: even though the notes are the same, every time we perform it there is a different sound, a different taste, a new feeling to it - in the same way that a song played live on stage is different in each performance. Recognizable, yet different. This is something that industrial beer cannot achieve. And this is the very soul of craft beer, of being a craftsman. Marcos
